Where’s the Beef? At Ryan’s Meat Market!

If there’s one thing Ryan Swain knows well, it’s meat – particularly beef. The owner of Ryan’s Custom Processing and the new Ryan’s Meat Market, located at 2012 E. 13th Street, has been in the business for more than 25 years, including working with Tyson and the U.S. Dept. of Agriculture. He has a Master’s degree from Texas Tech in Meat Sciences.

“It’s a long time since I’ve not been in the protein industry,” he said. “And everywhere I’ve been and worked, I’ve learned. I’ve taken knowledge and developed my own style.”

It’s that style, especially his emphasis on aging beef, that makes his product so popular, he believes. “I’m all about a quality eating experience. It’s a point of pride for me,” he said. Ryan and his wife, Christy, purchased the processing plant in 2021, the year they moved to Dalhart. They upgraded the facility and its processes, and now have a completely new team on board, except for one long-term employee.

Ryan had been focusing on custom processing but recently decided to branch out into providing meat for Dalhart families’ dinner tables. Ryan’s Meat Market offers a variety of sausages, patties and hand-cut steaks.

“We want to be the first place Dalhart shops for meat,” Christy said. “We offer dry aged beef out of Texline and wet aged beef with additional aging. And we’ll cut the steaks to your preference. Let us help you!”

Ryan’s Meat Market is open Monday through Friday from 8:00 a.m. to 5:00 p.m. They will hold a Grand Opening and Ribbon Cutting at 10:00 a.m. on July 2. Everyone is invited to join the celebration.
